  • 3 medium sweet potatoes peeled and cubed
  • 2 tbsp butter (substitute as preferred for Vegan)
  • 1 tsp lime zest
  • 1 tsp kosher salt
  • ½ tsp ground coriander
  • ¼ tsp ground cayenne pepper

Instructions

  • Peel, cube, and boil the sweet potatoes until fork tender — about 15 to 20 minutes.
  • Meanwhile, combine the room temperature butter with the spices, zest, and salt until smooth.
  • Drain the potatoes. In the same pot, add the spiced butter to the boiled potatoes and mash.
  • Serve warm.
